INGREDIENTS

  • Chicken 1 (cut in pieces)
  • Rice 1 kg (soak for ½ hour before)
  • Hara masala ½ cup (ginger, garlic and green chili paste)
  • Onion 2 (chopped)
  • Black peppercorns 2
  • Cardamom 4 pods
  • Black cumin ¼ tsp
  • Garam masala 1 tsp (ground)
  • Oil 1 cup
  • Ghee ¼ cup (clarified butter)
  • Salt to taste
  • Yogurt 4 tbsp
  • Tomatoes 2 (chopped)

DIRECTIONS

  1. Heat oil and ghee and saute black peppercorns, cardamom and black cumin to infuse flavor.
  2. Then add in the onions. Add the hara masala and stir fry.
  3. Then add the chicken and stir fry thoroughly, add yogurt and cook until oil comes on top.
  4. Now add tomato and add 1 cup water and cook until chicken is tender and water dries.
  5. Add water, rice and garam masala and cook.
  6. Once the water is dry and 80% rice are cooked, simmer rice on low heat until rice are ready to serve.

  • Tomatoes 250 gms

  • Coriander Powder 2 tsp
  • Salt 2 tsp
  • Red Chilies Powder 1 tsp
  • Turmeric Powder ½ tsp
  • Mix Garam Masala 1 tbsp
  • Star Anise 4
  • Nutmeg Powder ½ tsp
  • Mace Powder ½ tsp
  • Finely Chopped Ginger 1 tbsp
  • Ginger Garlic Paste 1 tbsp
  • Plum 50 gms
  • Coriander Leaves ½ bunch
  • Mint Leaves ½ bunch
  • Yellow Food Color ½ tsp
  • Oil 4 tbsp oil
  • Onions (fried) 1 tsp

DIRECTIONS

  1. In a pan, add 2 1/2 glasses water, yogurt, turmeric powder, red chilies powder, salt, oil, mix garam masala powder, ginger garlic paste, nutmeg and mace powder, star anise and mix it.
  2. Add boiled beef in spice mixed water and cook for 10 minutes.
  3. Then add yogurt, yellow food color and rice. Cook until water dries and rice 80% cook.
  4. Now spread fried onions, tomatoes, plum, coriander leaves, mint leaves, finely chopped ginger and oil.
  5. Let it simmer for 10-12 minutes, removes from the stove. Dish out and serve.

INGREDIENTS

  • Onion 1 Medium , finely chopped
  • Garlic clove 1 , mince
  • Finely shredded ginger 1/2 Teaspoon
  • Water 3 Cup (48 tbs)
  • Sea salt To Taste
  • Turmeric 1 Teaspoon
  • Basmati rice 1 1/2 Cup (24 tbs)
  • Sweet peas 1 Cup (16 tbs) (fresh or frozen)
  • Diced carrots 1 Cup (16 tbs) (fresh or frozen)
  • Chopped dried cranberries 1/2 Cup (8 tbs)
  • Orange marmalade/Chopped candied orange peel 2 Tablespoon
  • Slivered almonds 1/2 Cup (8 tbs) , toasted
  • Red pepper 1 Dash

DIRECTIONS

  1. In a pan, heat 1/4 cup olive oil and saute the onion for 4 minutes. Add the garlic and the ginger. Stir and cook for a minute.
  2. Add water, salt, turmeric and bring to a boil.
  3. Stir in rice, bring back to a boil, cover, and turn the flame down to low. Cook for 15 minutes. Turn the heat off but keep the rice covered and resting on the stove for another 15 minutes.
  4. Meanwhile, in a saute pan, heat the rest of the olive oil, add vegetables (peas and carrot), stir and cook for couple minutes.
  5. Stir in the cranberries and orange marmalade/candied orange peel. Season with salt and red pepper and cook for another couple minutes. Turn the heat off and set aside.
  6. SERVING : Spoon the rice into deep serving platter, spoon the cooked vegetables over the rice and then sprinkle the toasted almonds on top.

DIRECTIONS

  1. In a cooking pan put 1 cup water, chicken, ginger garlic paste, salt, red chili, cinnamon sticks, black pepper corn, cloves, and green cardamom. Cover and cook until chicken is done and water dries.
  2. In an other pan add sufficient water, black cumin, salt and boil rice until 80% done.
  3. Drain water out of the rice.
  4. In a bowl mix yogurt, yellow food color, garam masala powder, ground cardamom, nutmeg powder, saffron and kewra water.
  5. Pour this yogurt mixture on chicken and spread layer of rice. Pour oil on top, sprinkle fried onion, green chilies, green coriander and mint. Simmer on low heat for 15 minutes.
  6. Serve warm with raita.

  • Boiled Sela Rice 300 grams
  • Finely Chopped Garlic 1 tbsp
  • Finely Chopped Onion 1
  • Tomatoes 2
  • Crushed Black Pepper ½ tsp
  • Paprika Powder 1 tsp
  • Olives 1 cup
  • Carrots (Cutting In Squares) 1
  • Capsicum 2
  • Lemon Juice 1 tbsp
  • Olive Oil 1-2 tsp
  • Salt to taste

DIRECTIONS

  1. Take capsicum and grease with 1-2 tsp of olive oil and roast in an oven or on a stove. Cut in rings and set aside.
  2. Take a cooking pan add olive oil and saute finely chopped garlic and finely chopped onion, now add tomatoes and fry then add carrot, olives, crushed black pepper, paprika powder and add to taste salt and stir fry.
  3. Now add boiled sela rice and cook till the flavors combine.
  4. At last add lemon juice and roasted capsicum mix it well and take out in a serving platter and serve it.

DIRECTIONS

  1. Heat the oil and add onions and the whole garam masala.fry onions till the colour changes to light brown then add the hara masala and fry well till the colour and the aroma changes.
  2. Now add the chicken pieces and cook well for 5 mins then add 1/2 cup water and cover.
  3. When the water evaportes add the dry masalas with the salt and tomatoes and cook for another 5 mins
  4. Now add the water and the garam masala powder. when the water starts to boil then add the rice and cover the lid. when the half of the water is dried then leave the rice on very low flame for 10 mins.
  5. Pulao is ready u can ser it with raita.
  6. Note: if cooking mutton pulao then first make the mutton stock and use the stock instead of plain water and follow the same steps.

  • Chicken 100 gm (boneless, boiled)
  • Spring onion 2 (chopped)
  • Cabbage ½ (chopped)

  • Peas ½ cup
  • Capsicum 2 (chopped)
  • Soya sauce 4 – 5 tbsp
  • White vinegar 4 tbsp

  1. Heat 1 tbsp oil and fry the eggs.
  2. Make the small pieces of fried eggs.
  3. Now preheat remaining oil and fry chicken, spring onion, cabbage, carrot, peas and capsicum for two minutes.
  4. Now add soya sauce, white vinegar, chinese salt, black pepper and salt and cook for two minutes.
  5. Now combine rice with fried eggs and cook it for a while then steam it.

  1. Heat oil; sauté ginger garlic paste then add, tomato, garam masala powder, salt, chili powder, coriander powder, and half cup water fry well.
  2. Add yogurt, coconut milk, add in prawns, cooks for 10 minutes, and lastly add brown onion, dried plum and lemon juice.

  • 1 medium onion, finely chopped
  • 3 garlic cloves, finely chopped
  • 3 tablespoons olive oil
  • 4 teaspoons curry powder
  • 2 cups long-grain white rice
  • 3 1/4 cups water
  • 2 teaspoons salt

DIRECTIONS

  1. Cook onion and garlic in oil in a 3- to 4-quart heavy saucepan over moderately low heat, stirring, until softened. Add curry powder and rice and cook, stirring, 1 minute. Add water and salt and boil, uncovered, without stirring, until surface of rice is covered with steam holes and grains on top appear dry, about 8 minutes.
  2. Reduce heat to as low as possible, then cover pan with a tight-fitting lid and cook 15 minutes more.
  3. Remove pan from heat and let rice stand, covered, 5 minutes, then fluff with a fork.

  • Warm milk 1 cup
  • Yellow food color (as required)

  • Red chili flakes 1 tbsp
  • Crushed black pepper 1 tbsp

DIRECTIONS

  1. Wash and soak 2 ½ cup of rice. Drain and then add Fresh water.
  2. Add in salt, mint leaves and allspices.
  3. Add in rice and boil. Add some oil in the pan, add fry onion till golden brown.
  4. Take half of the onion out.
  5. In the half onion, add in chopped tomatoes and 1 tbsp ginger garlic pate.
  6. Add in mince and 1 tbsp red chili flakes.
  7. When the water of the mince dries, add in prawns and 2 lemon juice, chopped green chilies and 1 tbsp crushed black pepper.
  8. When the water of the prawns dries, add in salt.
  9. Biryani Masala is ready.
  10. In the rice dish, grease it, spread the masala in the bottom. Layer the rice and put some masala over it again.
  11. Add in rice and yellow food color.
  12. Add lemon juice. Simmer it. Serve hot.

Cooking this pilaf in a rice cooks saves space on your stove for cooking other things. Make this vegetarian by using vegetable bouillon instead.

INGREDIENTS

  • 3 teaspoons chicken bouillon granules
  • 3 1/2 cups water
  • 3 cups uncooked white rice
  • 4 small heads baby bok choy, trimmed and chopped
  • 3 green onions, chopped
  • 1 carrot, chopped
  • 4 mushrooms, chopped
  • 1 teaspoon chicken bouillon granules
  • 1/4 cup water, or more if needed
  • ground black pepper to taste

DIRECTIONS

  1. Dissolve 3 teaspoons chicken bouillon in 3 1/2 cups water in a rice cooker.
  2. Stir rice, baby bok choy, green onions, carrot, and mushrooms into the bouillon and water mixture.
  3. Start rice cooker and cook until liquid is absorbed and rice is tender, about 50 minutes.
  4. Dissolve 1 teaspoon chicken bouillon and 1/4 cup water in a small bowl; transfer mixture to a blender.
  5. Scoop about 1 cup of the rice mixture into the blender with the bouillon mixture; process until mixture becomes a thin paste, adding more water as needed
  6. Mix the rice paste with the remaining cooked vegetables and rice until thoroughly combined.
  7. Season with black pepper.
